I have never lived alone. I went from living with my parents, to living with my boyfriend, who later became my husband. And when we moved in together, we already had a 2 month old baby boy. I also have never had to cook for myself on a regular basis. My mother did the cooking at home. I might turn the oven on, or boil the water for her, but she did the cooking, and meal planning. And my husband is the world's greatest cook, so he does the cooking, meal planning AND grocery shopping in our house.
Now, I am faced with the reality of finding an apartment on my own. He will keep the house. I don't want it and can't afford it on my own. But, I'm going to have to cook! And meal plan! And go to Wegman's, every week! My poor kids. I can do turkey burgers on the grill, but I won't have a grill. Last night I had to cook pork chops, cause The Big One and husband were not home yet. I had no idea if they were done. I called him to ask, and his response was, you've been eating them for years, and you can't tell? He can't use that as amunition to get full custody of the kids can he?
And I try to avoid meat. I will eat it, but if meal planning were up to me, veggie burgers would replace most of the meat entrees. My boys don't eat veggie burgers. They're gonna have to learn I guess. I am really good at French toast, black beans and rice, grilled cheese, turkey chili, and kielbasa. Other than that, there aren't many options. I guess they can get variety on nights they eat with their dad?
So, if you all have easy recipe ideas, please feel free to share. (like basic, beginner cooking people). Also meal planning solutions, the best way to make a grocery list, and basic stuff I should buy my first trip to stock an empty kitchen. Bring it on. Keep in mind I do not eat red meat at all, and I also don't do a lot of dairy. But I also have to get a 13 year old and 5 year old to eat it.
